El tiempo de cocci\u00f3n depender\u00e1 del tama\u00f1o de las patatas. Mientras, en otra cazuela, cocemos tambi\u00e9n los huevos. Cuando todo est\u00e9 hervido, rallamos las patatas y las zanahorias. Con los huevos cocidos lo que hacemos es separar las claras de las yemas. Reservar todo. Montamos las capas del pastel ayud\u00e1ndonos de un molde desmontable, empezando por una capa de patata, sobre \u00e9sta ponemos una capa de mayonesa, una capa de at\u00fan desmigado mezclado con la cebolleta y las anchoas (todo bien picadito). Volvemos a poner una capa de mayonesa. Otra de patata. Otra de mayonesa y a continuaci\u00f3n una capa de zanahoria y nuevamente de mayonesa. Para terminar, a\u00f1adimos las claras ralladas, cubrimos con mayonesa y decoramos por encima con las yemas desmenuzadas. Dejar reposar el pastel en el frigor\u00edfico 3 \u00f3 4 horas.
